Eggless Chocolate Mango Cupcake

  • Refined flour 2 cup
  • Unsweetened Cocoa powder 2 Tbsp
  • Cane sugar 1/2 cup
  • Fresh mango juice 1
  • 1/4 cup
  • Butter 1/4 cup
  • Baking soda 1/2 Tsp
  • Baking powder 1 Tsp
  • Vanilla Essence 1 Tsp
  • Lemon juice 1 tsp

Pre-heat oven to 180°C/ 350 °F/. if preparing in pressure cooker pre-heat for 15 mins.

In a mixing bowl take sugar, mango juice, melted butter and vanilla essence, combine well.

Sieve refined flour, cocoa powder, baking soda and baking powder in another mixing bowl, then pour the wet mixture to dry ingredients, fold without lumps.

Then add lemon juice combined well.

Now pour the batter to greased Muffins moulds and place to pre-heated oven and bake for 20 to 25 mins.

If preparing in pressure cooker, place one empty container in preheated cooker and then on top of that set the cake batter pan, close the lid do not put whistle, then bake for 40 to 45 mins in medium flame.
