Foxtail Millets Idli

- Black gram / Urad dal 1 cup
- Flattened rice/ Poha 1/4 cup
- Salt to taste
Foxtail millets or Navane is one of the oldest cultivated food in India, its a ideal grain for control diabetes and high cholesterol. Millets are rich in dietary fiber, gluten free, protein and low calories and foxtail millet is recognized as diabetic food. At present millets are available in rice, semolina, powder form. Here i tried idli with foxtail and texture was very soft and fluffy, the procedure explained below.
Wash and soak foxtail millets and black gram seperatly for 5-6 hours.
Soak Flattened rice 30 minutes before grinding.
Grind black gram, flattened rice together and make a fine paste, grind millets in coarsely .
Then combine urad dal batter, coarse millets together and prepare a batter.(if it is too thick add little water and prepare dosa batter consistancy).
Leave this batter for 8-9 hours to ferment.
Next add salt combine well, then pour batter to idli moulds and steam it for 15 -20 mins.
Serve hot with Chutney or Sambar.
