Creamy Spinach Pasta

  • Spinach 1 bunch
  • Pasta 1 cup
  • Coconut milk 1 cup
  • Capsicum 1
  • Chopped Tomato 1 cup
  • Onion 1
  • Salt to taste
  • Italian herbs ½ Tsp
  • Red chilli paste 1 Tsp
  • Chopped garlic 1 Tsp
  • Coriander leaves
  • Fennel seeds 1 Tsp
  • Butter 2 Tbsp
  • Pepper powder ½ Tsp

Wash and dip spinach in boiling water, after few minutes drain the water and squeeze for remove excess water, then make a fine paste.

Add pasta to boiling water with little salt and allow it to boil, after cook the pasta drain it.

Heat little butter in pan, add fennel seeds, chopped garlic fry once then add onion.

Once onion turns to light pink add capsicum and tomato fry till tomato become smooth.

Then add coconut milk, red chilli powder, pepper powder, remaining butter, and spinach paste mix well.

Now add cooked pasta and salt to it mix well, garnish with coriander leaves. Serve hot.
